Cookie Treats

I have cookbooks and notebooks of saved recipes, but this recipe caught my eye recently in the magazine section of the Sunday paper because of the 1-2-3Bake title. It was written by Dorie Greenspan and said "A great snack for after work or after midnight." Well, I must say I'm glad I tried it.
Peanut-Butter Cookies
2 1/2 cups of all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
2 sticks unsalted butter, softened
1 cup premium peanut butter(not natural)
3/4 cup sugar
3/4 cup(packed) brown sugar
2 large eggs
More sugar, for rolling
  1. Whisk together the flour, soda, powder, and salt. Beat the butter, peanut butter, and both sugars for 2 minutes. One by one, add eggs; beat 2 minutes. Gently blend in dry ingredients.
  2. Divide in half, wrap, and chill overnight. Shape scant tablespoons of dough into balls, roll in sugar, and place 2 inches apart on lined baking sheets. Press with fork tines.
  3. Bake at 350 degrees F for 12 minutes, until golden. Let rest for 2 minutes; transfer to racks to cool.

..love the hammered aluminum tray..the big one..what design does it have in the center?...I have a few of those myself :)

Hey, Summer. In the center of that large tray there's a buck and doe standing together and geese flying overhead. That particular tray belonged to my daddy's mother. Hope you try the cookies. Sandy

If it wasn't for the peanut butter, I'd be trying that recipe right now! We've learned what a disaster using soynut butter as a substitute can be...
